On the 30th of May every year, our family in the Canary Islands celebrates "The Day of the Canary Islands". It is a public holiday in the Spanish autonomous community and was chosen as the anniversary of the first session of the Parliament of the Canary Islands, held on 30 May 1983. To celebrate, many Canarians enjoy a local sweet coffee cocktail called the Barraquito! The Canary Islands are well known for their Rum and so it forms an important part of this drink.

1 shot of espresso
2 tablespoons condensed milk
1-2 tablespoons Oak Infused Rum
hot fluffy milk
a little piece of lemon zest and optionally orange zest
pinch of cinnamon
Pour condensed milk to a tall glass.
Add Oak Infused Rum and fill in the glass with the hot fluffy milk.
Pour the shot of espresso looking out not to mix the levels.
Add lemon and optionally orange zest.
Sprinkle with cinnamon.
